Crock Pot Curried Chicken!

That's the meal for tonight! I need to get on it because it takes like 8 hours to cooks and well, at this rate it will be done at 6! So a quick blog session. I hope it's good. I have done international cuisines in my crock pot before, but they didn't turn out that great! Hopefully this will be good. I will give you the recipe and blog tonight on the success of the recipe ( if there is a need for one ).


  • 6 boneless skinless chicken breast
  • 1 T Extra Virgin Olive Oil
  • 2 Cloves garlic, crushed
  • 2 Scallions, finely chopped
  • 4 T Curry powder (more or less to taste, based on your preference)
  • 1 T Allspice
  • 1/2 cup coconut milk
  • 1 tsp ginger
  • 1 1/2 cups chicken broth
  • 1 carrot, peeled and shredded (optional)
  • 1 Potato, peeled and diced
  • 1 tsp. cayenne pepper
  • coriander, for garnish


1. Place all ingredients in the crock pot.
2. Mix well to coat evenly.
3. Cover and cook on low for 8 hours.
4. Using two forks, shred chicken and serve over rice.
5. Garnish with coriander.

The last week :)

Hey there readers,

This past week has been pretty good! Colin came on Friday and left late Saturday night. Eric seemed to enjoy his company. We are still looking for houses too. This is becoming quite the task, not because we can't find a house, but there are plenty of them available and they all seem like such good deals. Thank goodness we have such a good realtor to help us decipher. I am so excited we found, we definitely lucked out! We went to this one house it was 3300 sq ft. and it had multiple buildings. This house was SO CUTE. It was a little farm house. It had an orchard, vegetable garden, and a separate cottage! Although I loved this house, it seemed as if it was TOO much work. I want to live in a house, not let the house live me. Then, as I thought this house could be amazing to live in we walk into this cute yellow home. It has 3000 sq. ft. and it feels like home :) It had an amazing back yard and it's fully fenced for a dog someday. I really can't wait to be able to put an offer on a home. Hopefully, that will be soon. Well, i'm tired of blogging, maybe I will do some later.

Daily Ramblings....

So today is the day I am going to start blogging. It may be boring and no one may read it, but it will give me something to do :)

On the agenda today is to CLEAN HOUSE! Eric's friend Colin is coming tomorrow. Hooray, our first Washington State visitor. So excited. They are going to go do some hiking and just enjoy everyone's company for the weekend. Should be fun! It's definitely a breath of fresh air since our household has been less than average in the health aspect.
Eric hurt his back at work. So we have been trying to get him rehabilitated as soon as possible. That's becoming more of challenge than I thought. Hopefully he gets better soon. Plus I have been sick for the last couple of weeks. I really need to get back to the gym though, I have been feeling the lack there of since I haven't been going.
Besides that all has been going well in the Lynn household.
